Long Weekend On The Slovenian Seaside – Portorož&Piran

Finally my latest travel guide is ready. I know I have to improve my blog writing skills, especially time wise, as we nearly off to our next adventure… Here is my Portorož&Piran travel guide.

We like to spend a few quiet days on the seaside during spring, when flowers are blooming and warm sea breeze is blowing. It is the right time to relax by the pool, take long walks on the beach and celebrate the arrival of spring. This time we decided to spend three nights in Portorož, Slovenia and we had the most incredible time while we were there.

Portorož

Portorož has been known as the place of healing since the 13th century when the monks from the St. Laurence Monastery first used the sea water and brine for healing purposes. Ever since Portorož was home to many healing and wellness complexes, which to this day, use the healing properties of salt and the sea.

Our absolute favorite hotel in Portorož is the Kempinski Palace. The hotel was opened in 1910 at the time of Austro-Hungarian Empire, when Portorož was categorized as one of the most important coast resorts and spas on the Austrian Riviera. In the 2000s, Kempinski Hotels signed a contract to run and manage this hotel for at least 20 years. The renovation cost about 70 million euros and the hotel was reopened in 2008.
Our tip is to stay here in April when acacias are blooming, so you can enjoy your luxurious breakfast, served on fine porcelain with silver cutlery, in the sades of fragrant acacias.

To Do

Portorož – this little town is famous of it’s beach, have a coffee in on of the beach bars, while you soak in the spring sun and watch the locals passing by. Or you can stay in the hotel and enjoy their superb, five star services. Book yourself a massage or a well needed facial, spend some time by the pool and take advantage of the pool bar!

Piran: from Portorož you can walk up to Piran, which is a beautiful, easy walk on the seaside. Piran was heavily influenced by the Venetian Republic, therefore the monuments differ greatly from those inner parts of Slovenia. Until the mid-20th century, Italian was the dominant language, but was replaced by Slovene as demographics shifted.

What to eat

Slovenian cuisine is influenced by the diversity of Slovenia’s landscape, climate, history and neighboring cultures. Istrian cuisine in five words, (at least for me): Fleur de sel, truffles, seafood, olive oil and Malvazija (Istrian white wine).

What to wear

European spring is kind of unpredictable, some days are raining cats and dogs, some days are hot like a southern California day. You better pack your wellies and an umbrella along with your favorite bikini. Comfortable shoes are a must, but don’t forget to pack a pair of heels and a pretty dress if you’re staying in a five star environment. You do not need to worry about your clothes getting wrinkled, as five start hotels are offering ironing and 24 hour cleaning services.

My Top 5 Oatmeal Recipes

Oat Bowls coverI never seem to tire of oatmeal, especially in colder months. It is super simple to make, vegan, refined sugar free and oh so delicious!  I like my oatmeal creamy and not too sweet, so feel free to add more (or less) liquids and sweeteners! Here are my top 5 oatmeal recipes to help inspire healthier mornings. 

Method:
(For all recipes, makes 1 bowl)
Combine nut milk water and oats in a saucepan and let it soak for 15 minutes. Bring it slowly to boil, then let it shimmer on a very low heat for about 5-10 minutes, stirring frequently. Add remaining ingredients (vanilla, tahini, cocoa powder, matcha, coconut sugar, etc.) and stir well before turning off the heat. If oatmeal seems dense, add in a little more milk until a creamy mixture forms.
Transfer to your favorite bowl and add your toppings.

Sziasztok kedveseim! Ez alkalommal csokorba gyűjtöttem nektek kedvenc zabkása receptjeimet, szám szerint ötöt. Ez az étel nálam megunhatatlan, főleg a hűvösebb hónapokban. Szuper könnyű elkészíteni, vegán, finomított cukor mentes és isteni finom! Én krémesen és nem túl édesen szeretem, ezért ha te máshogy szereted, nyugodtan adj hozzá több (vagy kevesebb) folyadékot és édesítőt.

Elkészítés:
(minden recepthez, 1 adag)
Egy kisebb lábasban keverd össze a tejet, vizet és zabpelyhet és hagyd, hogy jól megszívja magát, úgy 15 percig. Ezután lassú tűzön forrald fel, és gyakran megkeverve, nagyon alacsony lángon főzd krémesre. Ha túl sűrű lenne hígítsd a kívánt állagúra. Ezután add hozzá a többi hozzávalót (vanília, kókuszvirág cukor, matcha, kakaó, stb) majd keverd össze alaposan, és vedd le a tűzről. Tálald szépen feldíszítve a kedvenc tálkádban.

 

1. Matcha Oatmeal

Ingredients:
1/2 cup oats
1/2 cup almond milk
1/2 cup water
1 teaspoon matcha powder
1/2 teaspoon spirulina
1 tablespoon coconut sugar
Toppings: banana, pecans, dark chocolate, white matcha chocolate, edible flowers.

 

2. Basic Breakfast Bowl

Ingredients:
1/2 cup oats
1/2 cup almond milk
1/2 water
1 tablespoon coconut sugar
Toppings: banana, mango, blackberries, peanut butter.

 

3. Triple Chocolate Oatmeal

Ingredients:
1/2 cup oats
1/2 cup rice milk
1/2 water
1 teaspoon raw cocoa powder
1 teaspoon medjol date syrup
Toppings: coconut shavings, sf hazelnut spread

 

4. Vanilla Oatmeal Bowl

Vanilla Oatmeal

Ingredients:
1/2 cup oats
1/2 cup almond milk
1/2 water
1 teaspoon vanilla
1 tablespoon coconut sugar
Toppings: baked banana, blueberries, crushed pecans, dark chocolate shavings, sf hazelnut spread, fresh mint

To make baked bananas slice a banana into thick slices. Heat one teaspoon coconut oil in a non sticky frying pan, and bake slices for 2-3 minutes each side, or until golden.

 

5. Tahini Oatmeal

Tahini Oatmeal

Ingredients:
1/2 cup oats
1/2 cup almond milk
1/2 cup water
1 teaspoon date syrup
1 tablespoon tahini
1 tablespoon raw cocoa powder
Pinch of salt
Toppings: banana, blackberries, dark chocolate, peanut butter.

Creamy Coconut Oatmeal with Guilt-free Strawberry Vanilla Jam

Creamy oatmeal is one of my favorite warming breakfast on a cold winter day.  Add some guilt-free strawberry jam for that pop of color and extra flavor!

Ingredients: serves 1
1/2 cup oatflakes
1/2 cup rice milk
1/2 cup coconut water
1 teaspoon shredded coconut
1 teaspoon coconut sugar
1/2 teaspoon cinnamon

Method:
Bring the almond milk to a boil and stir in your oats and coconut water. Bring back to a boil, then lower the heat and continue to cook the oats until cooked (about 5-10 minutes). Take off heat and stir in cinnamon, coconut and coconut sugar. If oatmeal seems dense, add in a little more milk until a creamy mixture forms.
Top with fruit of choice and any additional toppings. I rounded mine with banana slices, coconut shreds, cocoa nibs and a heaped tablespoon of strawberry vanilla jam.

Strawberry Vanilla Jam:

500g frozen or fresh strawberries hulled
1/4 cup xylitol or any sweetener you like
2 tablespoon chia seeds
1/2 teaspoon vanilla extract
Pinch of salt

Method:
Toss strawberries in a saucepan on medium high heat and cook, stirring often, until they begin to soften and release water. Turn down to a simmer, add your sweetener, chia seeds, vanilla and salt, and simmer strawberries stirring occasionally until liquid is reduced by half. Remove from heat and let sit for 15 minutes to thicken.

Egyik kedvenc téli melengető reggelim egy tál krémes zabkása, kiegészítve egy jó adag bűntudat mentes, vaníliás eper lekvárral.  Csak hogy legyen benne valami plusz íz, és szép szín is!

Hozzávalók:
1/2 csésze zabpehely
1/2 csésze mandula tej
1/2 csésze kókusz víz
1 kiskanál kókusz reszelék
1 kiskanál kókuszvirág cukor
1/2 kiskanál őrölt fahéj

Elkészítés: 1 adag
Melegítsd fel a mandula tejet egy lábasban, majd add hozzá a zabpelyhet, a kókusz vizet és forrald össze. Mérsékeld a tüzet, és 5-10 perc alatt, sűrűn kavargatva főzd krémesre. Vedd le a tűzről és add hozzá a fahéjat, reszelt kókuszt és kókuszvirág cukrot. Ha túl sűrűnek érzed lazítsd egy kis mandula tejjel. Koronázd meg gyümölccsel vagy bármivel, amit szeretsz. Én banán szeletekkel, kókusz szeletekkel, kakaó forgácsokkal és egy jó kanál vaníliás eper lekvárral fogyasztottam!

Vaníliás eper lekvár
(eredeti recept: twospoons.ca)
500 g friss vagy fagyasztott eper
1/4 csésze xilit vagy a kedvenc édesítőd
1 kávéskanál vanília kivonat
Egy csipet só

Elkészítés:
Tedd az epret lábasba és gyakran kevergetve addig főzd közepesen magas lángon, amíg megpuhul és levet enged. Vedd lejjebb a hőfokot, add hozzá az édesítőt, chia magot, vaníliát és forrald a felére közepes lángon. Vedd le a tűzről és 15 percig pihentesd, ennyi idő alatt szépen besűrűsödik.

Vegan Strawberry Bliss Balls

 

Strawberry-bliss-balls-3Try this easy to follow Vegan Strawberry Balls recipe. It is quick and absolutely delicious with healthy ingredients, free from dairy, egg, nuts and refined sugar.

INGREDIENTS:
1 cup fresh raspberries
1/2 cup oat flakes
1/2 cup quinoa puffs
1/2 cup desiccated coconut (plus extra for dusting)
1 tablespoon of your favorite sweetener (coconut sugar, agave syrup, honey, etc.)
1 tablespoon chia seeds
1 teaspoon vanilla
1 tablespoon pink pitaya powder (optional – plus extra for dusting)

METHOD:

  1. Process strawberries until smooth. Add remaining ingredients and process until finely chopped and mixture comes together.
  2. Roll 1 level teaspoon into balls.
  3. Place extra coconut in a shallow plate. Roll half of the balls in coconut to coat.
  4. Place extra pink pitaya powder in a shallow plate. Roll leftover balls in pitaya powder to coat.

Strawberry-bliss-balls-2Strawberry-bliss-balls-1Készíts Vegán Eper Golyócskákat! Az elkészítése pofon egyszerű, csak egészséges alapanyagokból áll, és a végeredmény mennyei. Tejterméket, cukrot tojást és olajos magvakat nem tartalmaz!

HOZZÁVALÓK:
1 csésze friss eper
1/2 csésze zabpehely
1/2 csésze puffasztott quinoa
1/2 csésze kókusz reszelék (plusz extra a forgatáshoz)
1 evőkanál a kedvenc édesítődből (agávé szirup, xilit, méz, stb.)
1 kiskanál vanília
1 csapott evőkanál rózsaszín sárkánygyümölcs por (elhagyható, plusz extra a forgatáshoz)
ELKÉSZÍTÉS:

  1. Aprítóban pépesítsd az epret, majd add hozzá a többi hozzávalót és alaposan keverd össze.
  2. A masszából formázz kisebb golyókat. Az enyémek nagyjából fél pingpong labda nagyságúak.
  3. Egy lapos tányérra szórj kókusz reszeléket és hempergesd meg benne a golyócskák felét.
  4. Egy másik tányérra szórj a sárkánygyümölcs porból és hempergesd meg benne a maradék golyókat.

And there you have it! Store away in your fridge in an airtight container for up to two weeks!

Perfect Valentine’s Day Smoothie

 

Valentine-smoothie-1Celebrate Valentine’s Day with this smoothie! Luscious raspberries meet zesty cranberries and creamy banana in this secretly healthy smoothie, that is perfect for this special day. Simply blend all ingredients until smooth and decorate as you like. I used shredded coconut, cocoa nibs and cranberries.

Ingredients:
1 banana
1 cup frozen cranberries
1 cup raspberries
1 cup rice milk
1 cup unsweetened reg grape juice
1 tablespoon oats

Ünnepeld a Valentin napot ezzel a csodapink smoothie-val! Zamatos eper, savanykás vörös áfonya és édes-krémes banán randevúja, egy egészséges fogásban. Az elkészítéséhez turmixold krémesre az alábbi összetevőket és díszítsd az ízlésednek megfelelően. Én az alábbiakat használtam: kókusz reszelék, kakaó darabkák és vörös áfonya.

Hozzávalók:
1 banán
1 csésze fagyasztott vagy friss vörös áfonya
1 csésze fagyasztott vagy friss eper
1 pohár rizs tej
1 pohár cukrozatlan vörös szőlőlé

Egypt – The Land Of Golden Magic

For the first time in my life we celebrated New Year’s Eve somewhere, where the temperature is above 5 degrees Celsius. Getting away from European winter and spend a whole week at the Red Sea was undoubtedly enjoyable. Not to mention we celebrated the new year in another continent, Africa. Most of the time we chilled on the beach and enjoyed the sunshine, however the hotel offered more than that. We couldn’t resist and sacrificed two days of laziness and went on a snorkeling and a Sahara tour. Because balance is everything, right? 🙂

Weather

Hurghada’s subtropical desert climate, makes it a top holiday destination all year round. December temperatures are cooler than in the summer, but still a lot warmer than the snowy European weather. Highs of up to 22 degrees Celsius are common, and overnight temperatures dip to around 12 degrees.

Basically it never rains in Hurghada. You can expect rainfall two times a year, for a rough 10-20 minutes. Yeah baby, it is the desert, so you can expect 7 hours of sunshine a day, and sea water temperature around 24-26 degrees Celsius.

What to pack

Bikini: it is a must in Egypt! That was the first thing I put in my suitcase, I didn’t want to miss the perfect opportunity to wear a bikini in December.
Jeans: well, you have to wear something when you go to the airport 🙂 It came handy though on the evenings.
Light jacket&scarf: overnight temperatures dip to around 12 degrees, and it can feel cool and windy, so pack a light jacket for the evenings.

Sandals: a pair of sandals is always a good idea, you can wear it with jeans or skirts.
Sneakers: I basically live in sneaker, and it was very useful  in the desert too.
Sunscreen: if you are heading to Africa you must bring sunscreen, if you don’t want to end up sunburned. This is my favorite.

What to do

Obviously there was New Year’s Eve and day to celebrate, although Egypt is predominantly Muslim with a sizable Christian population, so expect lower key festivities than you’d experience in Europe. The hotel however hosted a glorious New Year’s Eve gala dinner, serving unbelievable amount and variety of food.

Snorkeling tour: Giftun Islands are popular excursion from Hurghada, offering snorkeling, diving, sunbathing and a welcome retreat from the mainland bustle. The islands are famous for their pristine protected beaches, and a resort on the larger island providing all the facilities you need for a day by the sea.  The day ended with a sunset boat ride back to the harbor.

Desert adventure: we spent the entire day in the Sahara, where we had the chance to drive boogie cars and quads. After lunch we went on a Jeep ride and visited a Bedouin village deep in the desert. The day  ended with dinner and a traditional fire and belly dance show.

What to eat&drink

Egyptian cuisine is notably conducive to vegetarian diets, as it relies heavily on legume and vegetable dishes. Meat has been very expensive for most Egyptians throughout history, so a great number of vegetarian dishes have been developed. Pita bread is a staple of Egyptian cuisine, and cheese making in Egypt dates back to the First Dynasty of Egypt.

Tea is the national drink of Egypt, and beer is the most popular alcoholic beverage. While Islam is the majority faith in Egypt and observant Muslims tend to avoid alcohol, alcoholic drinks are still readily available in the country.

My personal favorites were different types of  vegetable tagines, falafels with tahini, roasted veggies and mashed fava beans.

Where to stay

SUNRISE Royal Makadi Aqua Resort is the perfect place for a fun and relaxing holiday. It is located in the heart of Makadi Bay, a main region with the best diving and snorkeling areas. The Resort is built on a serene landscape with a special architectural design surrounded by lush gardens, four magnificent pools (two heated!) and an aqua park. The hotel has 8 restaurant, our favorites were the El Paso (Mexican), Roots (diet&light food) and the Bedouin Restaurant (local cuisine).

Vitamin Packed Fruit Bowls For Those Gloomy Winter Days

I recently discovered that my body starts to run low on vitamins by the time we step into the new year. I decided to eliminate vitamin deficiency and try to consume as much vitamin-rich fruits as I can for breakfast. My all time favorites are banana, blood orange and kiwi, as all three fruits contains vitamins and minerals essential for the body.

Banana – rich in potassium and magnesium, which has a beneficial effect on blood pressure and cardiovascular system.

Blood orange – contains high amounts of vitamin C, potassium, vitamin A, iron, calcium, and fiber. Especially recommended for people with hypertension and heart disease.

Kiwi – this small, hairy fruit is a great source of vitamin E, copper, vitamin K, magnesium and phosphorus, also improves sleep and sleep effeciciency.

The other reason I like to make fruits bowls is that it is so easy to make, chop your favorite fruits and arrange them in your favorite bowl. That is it! I used frozen berries, peanut butter and puffed quinoa for decoration.

Tip: You can use leftover fruits to make a smoothie next day.

winter-fruitbowl-1Az elmúlt években megfigyeltem, hogy év elejére elkezdenek kimerülni a vitaminraktáraim, ezért ilyenkor igyekszem sok-sok vitamindús szezon gyümölcsöt fogyasztani reggelire. Állandó kedvenceim ebben az időszakban a banán, a vérnarancs és a kivi, hiszen mindhárom gyümölcs tartalmaz a szervezet számár hasznos vitaminokat és ásványi anyagokat.

Banán – káliumban és magnéziumban gazdag, ami jótékony hatással van a vérnyomásunkra és a szívünkre.

Vérnarancs – nagy mennyiségben tartalmaz C-vitamin, káliumot, A-vitamint, vasat, kalciumot, és rostot. Különösen ajánlott magas vérnyomással küzdőknek, és szívbetegeknek.

Kiwi – ez a kis szőrös gyümölcs remek E-vitamin, réz, K-vitamin, magnézium és a foszfor forrás, továbbá javítja az elalvást, az alvásidőtartamát és hatékonyságát.

Az a szépsége a gyümölcstál elkészítésének, hogy pofon egyszerű, aprítsd fel a kedvenc gyümölcseidet és csinosan rendezd el őket a kedvenc táladban. Díszítésnek fagyasztott bogyós gyümölcsöket, mogyoró vajat és puffasztott quinoát használtam.

Tipp: A maradékot tedd a hűtőbe és másnap készíts belőle egy finom smoothie-t!
